Lemon Pepper Tilapia

I got this recipe from one of the ladies I worked with. It is very simple, tastes great and sure to please. Whenever I get home late from work and need a fast meal before going out for the time, this recipe fits the bill. Try it on your family; I’m sure you will get many requests to serve it often.

Menu tonight: Lemon Pepper Tilapia Toss Salad with Dressing

Lemon Pepper Tilapia 2-4 pieces of Tilapia 2-3 tablespoons butter lemon pepper

In a large skillet melt the butter, coat both sides of the tilapia with lemon pepper. Place in the melted butter and fry for two minutes on each side or until fish it flaky. Serve immediately. It is also delicious if you use lime pepper for a different flavor.

Tossed Salad with Dressing 1 bag of salad greens (any mixture) 1 small red onion, sliced into rings 1 cucumber, peeled and sliced 1 stalk of celery, diced 2 tomatoes, chopped 1/8 lb extra sharp cheddar cheese, cubed Oil and Red Wine Dressing to taste

Pour salad greens into a large bowl; add onion, cucumber, celery and tomatoes and cheese. Toss well. Just before serving, pour on the salad dressing. You may substitute your favorite salad dressing if you don’t care for red wine and oil. Add a loaf of French or Italian Bread and you have the fixings for a great meal.
